‘Tis the season of holiday parties! Were you asked to bring a party dish to your friend’s New Year’s Eve bash, but think you don’t know how to cook, or don’t have enough time? Think again!
This quick and fun recipe will tingle the taste buds – plus, it is the perfect recipe candidate if you need to make it ahead of time!

Beets
You need:
15-20 minutes total
2 tablespoons – extra-virgin olive oil
1 cup – plain yogurt
1 tablespoon – cider and/or balsamic vinegar
1 tablespoon – minced shallot
1 1/2 teaspoons – Dijon mustard
1 cup – crumbled feta or goat cheese
3 peeled apples, diced into 1 inch pieces
3 peeled beet, steamed, diced into 1 inch pieces
3 cups coarsely chopped radish
Spinach or mixed greens
Sliced or slivered almonds, pecans, or walnuts
Salt and black pepper
Directions:
- Steam the beets and let cool. While they steam, prepare the rest.
- Place the olive oil, vinegar, yogurt, shallot, and mustard in a large bowl and whisk to combine. Add the apple, greens, and cooled beets, and toss until they are coated in the vinaigrette.
- Add the radish, cheese, nuts, and season with salt and pepper. Toss and enjoy!
